Pineapple Upside Down Cake

Ingredients

  • 1 Stick Butter Melted
  • 3/4 Cup Light Brown Sugar
  • 1 1/2 Cup Flour
  • 1/2 Tsp Baking Powder
  • 2/3 Cup Sugar
  • 3/4 Tsp Vanilla Extract
  • 2/3 Cup Milk
  • 1/2 Pineapple Fresh

Instructions

  1. Preheat oven to 350 degrees

  2. Melt 1/2 stick butter and brown sugar in cast iron skillet.

  3. Add fresh pineapple.

  4. Sift dry ingredients. 

    Add 1/2 stick melted butter and remaining ingredients.

  5. Mix until blended.

  6. Pour over pineapple and brown sugar. 

  7. Bake in the oven for 40 minutes.

  8. Turn upside down and serve.

Pineapple Upside Down Cake is Jeff’s favorite and so easy to make.

We love it with vanilla bean ice cream. It’s also a great to serve at brunch.
