Ingredients

  • 3 15 oz. Cans white beans, rinsed
  • 2 Cups Spinach, rinsed
  • 1 Carrot, sliced
  • 1 Stalk Celery, sliced
  • 2 Cloves Garlic, minced
  • 1 Onion, chopped
  • 1 Tsp. Thyme, dried
  • 6 Cups Vegetable Broth
  • Salt and pepper to taste
  • 2 Tbsp. Olive oil
  • Parmesan Cheese, Grated

Instructions

  1. Saute garlic, carrot, onion, and celery in olive oil under tender.

  2. Add soup, beans, and seasonings.

  3. Bring to a boil and simmer for a half-hour.

  4. Add spinach and serve with cheese.
