Ingredients
- 3 15 oz. Cans white beans, rinsed
- 2 Cups Spinach, rinsed
- 1 Carrot, sliced
- 1 Stalk Celery, sliced
- 2 Cloves Garlic, minced
- 1 Onion, chopped
- 1 Tsp. Thyme, dried
- 6 Cups Vegetable Broth
- Salt and pepper to taste
- 2 Tbsp. Olive oil
- Parmesan Cheese, Grated
Instructions

Saute garlic, carrot, onion, and celery in olive oil under tender.

Add soup, beans, and seasonings.

Bring to a boil and simmer for a half-hour.

Add spinach and serve with cheese.
