Ingredients

  • 4 Peppers, Red, Yellow, Green and Orange
  • 1 1/2 lbs Ground Beef
  • 1 Cup Onion, chopped
  • 1 Cup Rice, cooked per package directions (I use minute rice)
  • 2 Tsp. Italian Seasoning
  • 1/2 Tsp. Garlic Powder
  • 1/2 Tsp. Salt and Pepper
  • 2 Cans Tomato Sauce (15 oz each)
  • 1 Cup Mozzarella Cheese, Shredded

Instructions

  1. Heat oven to 400 degrees.

  2. Brown ground beef with onions and seasonings. Drain off fat. Add cooked rice and blend.

  3. Clean peppers by removing seeds and membranes. Make sure to rinse the peppers to get all the seeds out.

  4. Pour 1 can of tomato sauce in the bottom of 9" baking dish.

  5. Place peppers into the dish. Pour remaining tomato sauce over peppers and cover with foil.

  6. Bake 40 minutes or until peppers are tender.

  7. Remove foil and top with cheese.

  8. Bake until cheese melts.

  9. Serve with remaining sauce.
