Lemon Pasta
Ingredients
- 1 lb fresh fettuccine noodles
- 3 lemons
- 2 cloves minced garlic
- salt and pepper to taste
- 1/4 tsp Sugar
- 1/4 cup parmesan cheese, freshly grated
- 1/4 cup Parsley, fresh minced
Instructions

Zest lemon in stripes, put aside

Peel lemon, then segment the lemon into sections

Bring 2 quarts of water to a boil

Put lemon peels in the water and continue boiling until poached

Remove lemon peels, put off to side

Poach lemon segments quickly for one minute and remove, put to the side

Mix salt and sugar to the zest and rub with lemon zest

Bring olive oil to the heat, add garlic until brown around the edge

Add lemon zest

While you are browning the garlic, put pasta in boiling water

Boil for 3 minutes

Put lemon segments into pan with garlic

Put cooked pasta into pan with everything

Reserve pasta water and once you put pasta in the pan to blend the ingredients you add back in small amounts of pasta water

Cook with some fresh parsley

Plate with thongs and twist

Top with cheese
