Lemon Pasta


  • 1 lb fresh fettuccine noodles
  • 3 lemons
  • 2 cloves minced garlic
  • salt and pepper to taste
  • 1/4 tsp Sugar
  • 1/4 cup parmesan cheese, freshly grated
  • 1/4 cup Parsley, fresh minced


  1. Zest lemon in stripes, put aside

  2. Peel lemon, then segment the lemon into sections

  3. Bring 2 quarts of water to a boil

  4. Put lemon peels in the water and continue boiling until poached

  5. Remove lemon peels, put off to side

  6. Poach lemon segments quickly for one minute and remove, put to the side

  7. Mix salt and sugar to the zest and rub with lemon zest

  8. Bring olive oil to the heat, add garlic until brown around the edge

  9. Add lemon zest

  10. While you are browning the garlic, put pasta in boiling water

  11. Boil for 3 minutes

  12. Put lemon segments into pan with garlic

  13. Put cooked pasta into pan with everything

  14. Reserve pasta water and once you put pasta in the pan to blend the ingredients you add back in small amounts of pasta water

  15. Cook with some fresh parsley

  16. Plate with thongs and twist

  17. Top with cheese
