Corn Chowder

Ingredients

  • 8 Ears Corn, Roasted
  • 4 Slices Bacon
  • 1 Onion, Chopped
  • 3 Tbsp. Flour
  • 4 Potatoes, Cubed
  • 6 Cups Chicken Stock
  • 1 Cup Half and Half
  • Salt and pepper to tasted
  • 2 Tbsp. Olive oil
  • pinch Cayenne pepper
  • Cheddar cheese, garnish

Instructions

  1. Heat oven to 500 degrees.

  2. Butter corn, season with salt and pepper. Wrap in foil and bake 20 minutes.

  3. Let corn cool. Remove from Cob.

  4. Heat olive oil in dutch oven. Cook bacon until crisp. Remove from pan.

  5. Cook onions in drippings for about 5 minutes.

  6. Mix in flour, salt, pepper and cook for 3 minutes.

  7. Add stock and potatoes. Cook until potatoes are tender.

  8. Add corn, half and half, and cayenne.  

  9. Heat through. Top with cheddar cheese and bacon.
