Cheesecake Pie


  • 1 8 oz. Cream Cheese, Softened
  • 1/2 Cup Sugar
  • 1 Tbsp. Lemon Juice
  • 1/2 Tsp. Vanilla
  • 2 Eggs
  • 1 Cup Sour Cream
  • 2 Tbsp. Sugar
  • 1/2 Tsp. Vanilla


  1. To make the filling; beat cream cheese until fluffy. 

  2. Add 1/2 Cup Sugar, Lemon Juice, Vanilla.

  3. Add eggs, one at a time, beating well after each.

  4. Pour into prepared graham cracker crumb crust.

  5. Bake at 325 degrees for 25-30 minutes.

  6. For Topping: combine Sour Cream, 2 T. sugar, and vanilla.

  7. Spoon over top of the pie and bake 10 more minutes.

  8. Cool. Chill for several hours before eating.

  9. Optional topping: melt soft caramels in a saucepan. Top with a sprinkling of course sea salt.

  10. Note: For the graham cracker crust I use graham cracker crumbs mixed with sugar and butter and bake ahead of time. Use the instructions on the box. This is much better than the prepared graham cracker pie shell.
