Minestrone Soup

Ingredients

  • 1 Tbsp. Olive Oil
  • 1 Onion, chopped
  • 3 Carrots, chopped
  • 3 Stalks Celery, chopped
  • 2 Cloves Garlic, minced
  • 6 Cups Vegetable or Chicken Broth
  • 1 Bay Leaf
  • 28-oz. Can Tomatoes, diced
  • 1/3 Cup Brown Rice
  • 1/2 Box Orecchiette Pasta
  • 16-oz. Can Kidney or White Kidney Beans, with juice
  • 1 lb. Fresh or frozen green beans, optional

Instructions

  1. In a 6-qt. pot, saute onion, celery, carrots, and garlic until tender.

  2. Add broth, tomatoes, rice, bay leaf, and noodles.

  3. Bring to a boil and cover.

  4. Simmer for 50 minutes, stirring occasionally. 

  5. Stir in beans and simmer minutes.

  6. Remove bay leaf and serve.
