• 3 Chicken Breasts, boneless and skinless
  • 15-20 Basil leaves
  • 1 Cup Fresh Spinach
  • 4 Tomatoes, Beefsteak or Roma, chopped
  • 1 Can Artichoke Hearts, drained and chopped
  • 1 Bag Mozzarella Cheese, Shredded
  • 2 Cloves Garlic, finely minced


  1. Slice the chicken breasts in half to make them thinner then place into a 9 x 12 baking dish sprayed with Pam. Drizzle with olive oil. Season with salt, pepper, and 2 garlic cloves, finely chopped.

  2. Then top with Basil, Spinach, Tomatoes, Artichokes, and sprinkle with Cheese.

  3. Bake in a 375-degree oven for 45-50 minutes or until bubbly and brown.

  4. Serve with roasted cauliflower.

  5. Place cauliflower on a baking sheet. Drizzle with olive oil. Add salt and pepper and roast for 20-30 minutes or until tender.
