Farmer's Market Frittata

Ingredients

  • 1 16-oz. Heavy Cream
  • 6 Eggs
  • 1 tsp Salt and Pepper
  • 6 pats Butter, unsalted
  • 3 Cups Assorted Vegetables

Instructions

  1. Heat oven to 350 degrees

  2. Spray pyrex pie pan with non-stick spray

  3. Add whatever vegetables you like - zucchini, squash, tomatoes, broccoli, onion

  4. Place veggies into pie pan

  5. Hand whip or put into blender

  6. Pour Egg mixture over veggies

  7. You can also add cheese on top like Parmesan

  8. Dot with butter

  9. Bake one hour

  10. Let cool before cutting
